Note Paprika is quite the flavor booster to this Keto friendly healthy snack. It helps boost your metabolism, reduces your appetite and to lower your blood pressure.
I medium sized fresh zucchini
choose a zucchini that is about 50 cent piece size in diameter I Tablespoon pink Himalayan salt (pink salt provides minerals that everyday table salt does not)
1/3 Tablespoon white pepper (white is stronger flavor than black pepper, season to taste)
1 Tablespoon extra virgin olive oil (EVOO) a good olive oil is well worth the extra $, it provides superior taste.
1/2 Tablespoon sweet or smoky paprika Use the one you have on hand or choose by flavor choice, sweet or savory! (use more if like me, you like the extra jazz this aromatic and tasty spice brings)
Keep paprika in the freezer to help retain that beautiful red color, freezing does not alter taste and prevents browning.
Preheat your oven to 375 degree
Wash and dry your zucchini. Cut your zucchini into discs, discarding stem and blossom ends.
Thinner discs require less cook time.
I use a mandolin to ensure even slices. If cutting by hand use a fork to marks the veggie to give a guide line for even cutting.
Getting thin Even slices will ensure even browning.
Place a sheet or parchment paper on cookie sheet.
Mix zucchini, salt, pepper and paprika along with olive oil in a bowl, gently toss. Try to evenly coat all slices, this can be done in two or three batches.
Place zucchini on parchment paper lined cookie sheet like coins on a tray. No space between discs is necessary. They will shrink as they dry from the heat.
Bake for 25-30 minutes, keep an eye on them as thickness of chips and ovens vary. When they begin to curl,dry and crisp they are just about ready. At this point I turn my oven off, and leave the
chips in. This helps them crisp and prevents over browning. Remove from oven let cool and enjoy!!!
I like to just crunch on them plain, but also amazing with a dip. Serve a dip of your choice. I like full fat sour cream with everything bagel seasoning. Makes approximately 2 cups.
After placing chips on baking sheet before baking, sprinkle with fresh fine grated parmesan cheese, onion powder, garlic powder, bbq or taco seasoning.
